Most white wines come from white grapes, although white wine can be made from red grapes by extracting the juice and separating it from the skins and stems. The process of mashing the interior and exterior of the grapes produces tannin, an ingredient which lends heavily to the distinct flavor and complex palette of red wines. Although tannin can be found in white wines which were fermented in oak barrels, it is far less common in white wines as in red wines.
